Had a kit that included knitting a flat hat. 1) I don't like the way it works up, 2) the edge rolls horribly and 3) it must've been a kid's kit so my teddy bear now has a new hat :(
So really it is just knit flat - something I hadn't done before. I had always knit hats in the round until I tried this. I really didn't like the finished product because of the seam, but hey, I tried it!
